With its extreme simplicity, Sienese cuisine contains all the finest Tuscan flavours and ingredients. Its style, simple but refined, is strongly influenced by history and geography. The dishes are based on local farm products, including meat of native breeds and an exceptional olive oil.
This is how sublime dishes are created, such as lightly-smoked Carpaccio of Cinta Senese ham, finest Chianina beef marinated in powdered liquorice and balsamic vinegar, bitter orange Capocollo of Cinta with tarragon zabaione, Pappa al Pomodoro, a thick tomato soup served with a basil foam and caramelised tomatoes, and Medici salad with pecorino, anchovies and olives.
